my fridge had too many green chilli and tomatoes one time that for a few days i was eating food with the same ingredients. grrah. still not sick of it though :P not when cheese is involved :D

for the pizza, all you need is slices of bread (type of bread is up to you - i just had white), [spread] pasta sauce, [sprinkle] chopped green chilli, chopped tomatoes, diced bacon and shredded cheeeeeeese (i mixed parmesan, mozerella and tasty cheese)

i loooove cheese ! the grilled ones mmMMmmm . sucks that the bf hates it 

the picture on the bottom left, is just plain pasta u see on the right, but i topped it with the pizza ingredients above and put it under the grill.

and the picture on the right, is just plain spaghetti with pasta sauce and the same ingredients again without the chilli.

taste like lemon tea but not…. good for early prevention during cold/flu symptoms

homemade kimchi (Korean fermented cabbage)

for a quick healthy lazy meal

boil some rice, slice some tofu (unlike my picture above) and eat with kimchi :)

Coconut pandan sticky rice (sweet glutinous rice) served with coconut palm sugar syrup topped with shredded coconut 


Ingredients

Sticky Rice

  • Short-grain sticky rice (see notes) — 1 1/2 cups
  • Water — to cover
  • Coconut milk — 2 cups
  • Brown or palm sugar — 1/2 to 3/4 cups
  • Salt — 1 teaspoon
  • Pandan essence — 1 teaspoon
  • Shredded coconut (optional)
Syrup
  • 100 g palm sugar, chopped roughly
  • 100 ml water

Method

  1. Place the rice in a large bowl and fill bowl with enough water to cover rice by 2 to 3 inches. Let soak for at least 3 hours or, if possible, overnight. This is an important step, so don’t skip it.
  2. Drain and rinse the rice. Set up a steamer over about 3 inches of water and line the inside with moistened cheesecloth. Pour the soaked rice into steamer. Bring the water to a boil over medium flame, cover tightly and steam the rice for 25-30 minutes.
  3. Meanwhile, bring the coconut milk, sugar, salt, pandan to a slow simmer in a medium saucepan over low heat. Do not boil.
  4. When rice is finished, remove it to a large bowl. Stir half the sweetened pandan coconut milk into the rice. Adjust the amount of sugar to your taste, cover with plastic wrap and set aside to rest for about 30 minutes.
  5. To make the syrup,  boil water for the palm sugar syrup with the screwpine leaves. Keep stirring until sugar has fully dissolved. Pour out and leave to cool. Keep the syrup chilled in refrigerator.
  6. Finally, place the pandan coconut rice in a large bowl or individual serving bowls.  Pour a little of the remaining coconut milk over each portion and drizzle with some palm sugar syrup. (optional) Top with shredded coconut and serve at room temperature.
** you can also treat them like Japanese onigiri and mould the rice into balls. And serve as a small snack :)
